Pecan Slice

This sensationally delicious slice is also packed with mega nutrients. Isn't it fabulous to eat something 'naughty' and also know you are adding some good nutrition to this magnificent body of yours. However, you do need restraint when eating this as it is quite calorie and sugar dense. I went full on piggy wiggy with it when I first made it. I ate 5 slices over the period of 2 days but now I am practising huge restraint and only having ½ a slice a day.

Ukrainian Cabbage Rolls
What’s your relationship with cabbage? Do you love it or loathe it? I love it, I love a great coleslaw and I eat cabbage in the form of home made sauerkraut twice a day. When it comes to cooking it though I shy away from it a little bit but due to its immense health benefits I have been adding it a lot more into my diet. I have noticed that if I eat raw red cabbage I digest it really well but if I cook it I get digestive issues. If I cook white cabbage all is well. This will not be the case for everyone, it is a personal thing.

Pecan Pesto
Almost a year ago I got a phone call an hour before day one of the Vegan Foundation Cooking Course was due to start from a woman named Lisa wondering if there was a space left in the course that day. I had never had such a late booking before. I said “yes if you can get the application form filled out, sent back to me and be here in an hour then the spare place is yours.”
