Buzzing with Happiness

Hope everyone is very well.
I am buzzing with happiness after this last month of facilitating modules 2 to 5 of the Vegan Chef Training, as well as a few private days of teaching cooking and nutrition and now this last weekend the June 3 Day Foundation Cooking Course.  This was a wonderful three days with five fabulous participants. We had a full house (5 is my maximum) and a lot of incredible food was made.

A Recipe That Makes Cauliflower Sexy

Have you read my rave on cauliflower before?
Well here I am again raving about how fabulous this vegetable is. I can’t get enough of it.  Packed with vitamin C, K, B6, Folate, potassium, magnesium and really high in fibre, it is a must to add to your weekly diet when it is in season, which it is right now in the Southern Hemisphere.
As well as those fabulous vitamins and minerals it is a good source of antioxidants, especially carotenoid and flavonoids, which help prevent cancer and reduce risk of heart disease. Cauliflower is high in choline, which is fabulous for brain development. So what are you waiting for, print out this recipe and get a vegetable bake with a cauliflower cheese sauce in the oven today.

 

Vegetable Bake with Cauliflower Cheese Sauce

Ingredients
2 kg of vegetables chopped into 2 cm cubes 
I used potatoes, sweet potatoes, fennel (I sliced the fennel) purple carrots, orange carrots and parsnips
Olive oil 
Salt 
 
 
For Cauliflower sauce 
½ cup cashew cheese or ½ cup soaked cashews
½ cup soy milk 
½ medium cauliflower 
1 tbsp nutritional yeast 
Salt and white pepper to taste 
 

Method

  1. Place the vegetables in a baking tray with a generous splash of olive oil and a sprinkling of salt and bake in a 200°C oven  for 30 – 45 minutes  or until the vegetables are cooked.
  2. For the cauliflower sauce steam the cauliflower until it is soft.  Then place it in a blender with the milk, cheese, nutritional yeast and salt and pepper and blend until smooth.
  3. Place the baked veggies in a bowl and mix with the cauliflower sauce and place in a serving dish that can go in the oven. Bake for 20 minutes until the top of the veggies and sauce have browned.
