It’s time for a drink recipe – here is a great cordial

How are you all? How is everyone managing with lockdown? Feeling for those of you who, like me, have lost a lot of work due to the lockdowns. Like someone said recently if we can do okay in this tumultuous time, then we have a resilient business. 
 
Despite having to postpone the July Vegan Foundation Cooking Course and being super sad about that, I have had a really lovely week. I have facilitated a few Nutrition and Cooking Sessions that have been fantastic and empowering for all concerned. 
 
Also I co facilitated with Kiriko a Miso and Tofu Making Workshop on the weekend which was a lot of fun and we once again made very delicious tofu. We will be running another tofu and miso making day on the 31st October. There are only 6 places so if you are interested please email me to book in.

Last week one of our lovely readers requested a cordial recipe so yesterday I developed this recipe I am sharing with you today.  Usually when I feel like cordial I do two things: 
 
1. Like in Mexico I add watermelon or pineapple in the blender with lots of water and drink fruit flavoured water. In Mexico they add agave to the fruit water.
 
2. Buy sugar free pomegranate or cranberry juice and mix it with soda water.
 
This recipe I share is more like a traditional cordial, which has sugar in it to make it sweet. It will last in the fridge for a few weeks or in the freezer for 3 months and definitely needs to be diluted. Mak used the cordial with gin and soda water last night. I just took a wee sip – it was very good!

 

Raspberry and Blood Orange Cordial

Ingredients
 
350g raspberries (strawberries will work too)
Juice of 3 blood oranges
1½ cups filtered water
1 cup light agave or raw sugar
 

Method

  1. Place everything in a saucepan and simmer for 10 to 15 minutes.
  2. Turn off the heat and transfer to a blender and blend until smooth.
  3. Strain the cordial through a sieve and then decant to a bottle. Let cool before putting in the fridge.

Some of you may have seen that I now have a donate button on the recipe page. In 2020 when we first went into lockdown I thought I would have to give up the weekly recipes as they cost quite a bit of money to put together. 
 
Mel who uploads and designs the newsletters and puts it all together on my website suggested I didn’t do that as it was important everyone still received recipes during this time. 
 
So we did a food exchange. I am eternally grateful to her for this offering. This year I can no longer offer food exchange and have been managing to put the newsletters together but some weeks are tough to get the money together so it was suggested to me to put a donate for recipes button on my Facebook.
