Merry Christmas for those of you out there who celebrate this time of the year. I know for many vegans this is a difficult time. It has been for me a difficult time in the past. I shied away from Christmas for many years and only last year I decided to embrace it on my terms and I really enjoyed it. Some years ago I wrote a blog post with tips on how to cope with Christmas for vegans and for family who have vegan members.
This year we are planning on going to the beach with our friend and her adult son and I am super excited to be making the food for our brunch time picnic then we have been invited to an afternoon gathering back in our old home town. Both gatherings will be vegan, which makes me super happy.
At one of the gatherings I will be taking these super tasty corn ribs – served with guacamole and cashew sour cream. These would go perfectly with the other Mexican recipes I have for a Mexican style Christmas.
If you are looking for a more traditional Christmas menu here are some super recipes

I hope you all have a wonderful Christmas everyone no matter how you choose to spend it. Would love to hear from you during this time so please reach out, let me know what you are doing or not doing, what you are cooking or not cooking. And don’t forget there are only 10 days left until the early bird pricing finishes so if you would like to book into any of the wonderful courses or individual sessions I have for 2022 be sure to not miss out on the discounts.
