Who like pancakes for breakfast? Gluten free, vegan pancake recipes, probably the best pancakes I’ve ever eaten

Hope you are all having a restful and stress free festive season. Tomorrow I will make these pancakes and enjoy them at a leisurely brunch before watching the boxing day cricket. Love this time of year as I get to really slow down.

These pancakes were a treat for us a few Sunday mornings ago so it feels more than decadent to be having them again, but what the heck, I’m on holiday. I actually teach this recipe in the foundation module of the training so this is a treat for you to get this recipe now. We have run the foundation module eleven times now so we have perfected them along the way and in the last foundation module the lovely Angel of Rainbow Yoga fried them without oil – this didn’t make them crispy but made them very light and fluffy. A great tip Angel, thank you.

Make the fruit compote from the blog post two weeks ago  to serve with them or make a fresh fruit salad. Coconut yoghurt or coconut cream is also a decadent addition.

Buckwheat Pancakes

Ingredients

1½ cups buckwheat flour
½ cup of brown rice flour
1 tsp baking powder
 1 cup almond milk or more depending on how thin you want the panckaes
1 tbsp apple cider vinegar
1 tbsp sunflower oil
3 mashed bananas
Sunflower oil for frying

Method

Place all the dry ingredients in a bowl and whisk through. Add the rest of the ingredients and whisk so there are no lumps. Heat a small amount of oil in a frying pan and spoon in the mixture. Each side takes 5 minutes to cook. Make sure the pancake is cooked through.
