Who tried out the sunflower sour cream from last week? I made it on retreat last week and was loved by all, especially those who were allergic to nuts. Here comes the second recipe in the series of recipes that normally have nuts and have now been replaced with sunflower seeds. This is a refreshing dessert that you can cut up and keep in the freezer and take out slices whenever you want.
This recipe is inspired by a cake that Amanda of Sweets and Greens made for the chef training graduation this year. Please share this blog post with anyone who is on the look out for nut free recipes.
Passionfruit and Sunflower Seed Cheesecake
1 cup pepitas
1 cup dessicated coconut
1 cup pitted dates (soaked)
1 ½ tbsp rice malt syrup
Passion Fruit Layer
3 cups sunflower seeds (soaking for 6 hours0
½ cup fresh lemon or lime juice
pulp of 6 passion fruits
1/3 cup melted coconut oil
2 tbs rice malt syrup
Zest of a lime or lemon and a sprinkling of desiccated coconut
For the base, place the pepitas in a food processor and process until they form a bread crumb like consistency.
Add the coconut, pitted dates and rice malt syrup and process until all combined.
Press this mixture into a greased and papered 20 cm square cake tin and put in the freezer.
For the filling place the lemon juice, passion fruit pulp, coconut oil, rice malt syrup and sunflower seeds in the blender and blend until smooth.
Spread on the base evenly and then place in the freezer.
Take out of the freezer 10 minutes before serving so it is easier to cut .
Garnish with the lemon or lime zest and desiccated coconut.
