Happy 2018 everyone. I hope that you are having a great year so far, nine days in. I wish you all a year of abundance, balance, good food and above all kindness. It is feeling a really kind year so far with the vegan January initiative seeing a big increase on people signing up to try out a month on a vegan diet. In December one person was signing up every six seconds.

If you would like to try out Vegan January you are not too late to start

Starting the year off well I would like to share with you this week five smoothie recipes. In the vegan foundation course we make a smoothie from market produce with guidelines set by me to try and suit a range of smoothie needs.

No smoothie over the three years has been the same. The names are always created by the participants. I am sharing with you the smoothies made at the beginning of January as there will probably be a lot of the produce still in season. I’m also sharing one of my fave smoothies (pina smoothalata) that I love to serve on retreats.

All the smoothies make a litre so reduce as you need to.

Pina Smoothalata

½ pineapple
couple of sprigs of mint
1 orange
2 passion fruit
water to your desired thickness
2 tbsp desiccated coconut or 2 tsp coconut oil

Place everything except the passion fruit in a blender and pulse until smooth serve with the passion fruit on top.

The next four smoothies are in order of less sweet to the most sweet

Wake Up Nellie

This is my favourite as it is not sweet at all. If you like sweet smoothies don’t make this or add banana to it. Wilt the kale first otherwise it will inhibit the absorption of iron.

½ bunch kale wilted
1 small apple
 5cm piece of ginger
1.5 lemons- either the juice or the whole fruit peeled
2 stalks celery
1/8 tsp of cayenne pepper
water to your desired thickness

Place everything in a blender and whizz till smooth.

In the Jungle

1 cucumber
piece ginger
3 leaves of kale wilted
1 lime – either juice or the full fruit
1 banana
1 apple water to desired thickness

Place everything in a blender and whizz till smooth.

Mother of Dragons

1 pink dragon fruit
juice of 3 oranges
2 small passionfruit
¼ of small beetroot
water to desired thickness

Place everything except the passionfruit in a blender and whizz till smooth. Spoon the passionfruit on top of the smoothie.

Choc Nanna Nut

1 banana
¼ cup peanut butter
¼ cup raw cacoa
3 cups almond milk
dash vanilla

Place everything in a blender and whizz till smooth.

January Foundation Course

This is the first time in three years that I have run a vegan foundation course in January and I was under the impression it would be slow to book but I was wrong there are six people now booked in.

It starts on the 18th January so if anyone out there wants to take the leap and take the two available places please let me know. I would love to have you in the three day course.

Vegan Chef and Lifestyle training

For the full Vegan Chef and Lifestyle training the second round of early bird pricing ends on the 31st January so people interested and sitting on the fence have 22 days left to book in. There are currently four spaces left for the full course.
