The Best Ever Sweet Treat (Inspired by my recent meditation retreat at Osho International Meditation Resort)

Each year I am fortunate enough to spend a few weeks in The Osho International Meditation Resort in Pune India. This last visit came a month earlier than usual and is a visit I will remember forever. With very few friends visiting at the time of my stay I was able to really immerse myself in the many revolutionary meditation techniques Osho has developed.  My days were spent in the meditation auditorium, sitting around the pool drinking tea and reflecting on myself in that moment and walking around the gorgeous gardens. In past visits I have ‘made the most’ of my stay and gone to all the late evening meditations or participated in the wonderful celebrations that happen each night. However this recent visit saw me tucked up in bed by nine each night and up early for the 6 am dynamic meditation or 730 silent sitting so resting was a huge part of my stay.
 
The food of course was also a big part  of my stay. The beauty of the food in the resort is it is prepared with hygiene as a number one priority and is tested daily to ensure it is 100% clean and free of nasty’s. You can be relaxed when you eat knowing you will not take a stomach bug back home with you. You get to choose your meals from a servery and all the food is vegetarian with vegan choices available. If you want something different to what is on the servery you can order food from a menu which includes things like steamed veg with brown rice and a choice of sauce, my favourite being tahini lemon, or a vegan pizza, fried rice, pasta, Masala Dosa or Inidan Chilla bread with chutney.
 
In addition there is also freshly baked vegan and gluten free bread, crackers, cookies and treats like amaranth and pear cupcakes, lime and coconut chocolate squares, almond and pineapple slices and my all time favourite a slice called the candy bar.
 
The delightful Ghata who sees to the smooth running of many areas in the resort including the kitchen, generously let me have the candy bar recipe. I have changed the recipe slightly so if you want the real deal you best book your trip to the resort!
 
This recipe is delicious, I suggest you cut it up in small pieces as it is rich and it freezes well. Hope you enjoy trying out this recipe and if you feel tempted, book yourself a trip to the resort. I highly recommend it. Book yourself in on the living in program and immerse yourself in meditation , take a workshop and book yourself into some top quality body work sessions. OMIR Inspired Vegan Treat

(it makes 54 pieces so you may want to half the recipe, it freezes well)

Ingredients

850 g dates pitted and cut in half 
450 g walnuts
200g coconut flour
115 g dessicated coconut
100ml coconut cream
600g vegan chocolate
1/3 cup coconut oil

Method

In a food processor place the walnuts and pulse until they resemble fine bread crumbs.
Place the dates in the processor and pulse until they are well combined with the walnuts.
Add the coconut flour and desiccated coconut and pulse until all combined. Add the cream and pulse further.
Press mixture evenly into a lined square or rectangle baking tray.
Put in the fridge overnight to set.
Melt the chocolate and coconut oil in a bowl set over a saucepan of boiling water.
Pour evenly over the walnut and date slice and refrigerate for an hour or so or until the chocolate has set.
Cut to your desired slice or piece.
