Today is my mum’s birthday and I can’t contact her to wish her a happy birthday as she is away on a holiday without a phone. So I thought I would let her know I was thinking about her on her birthday by dedicating a blog post to her. When she gets back from her holiday and opens her email she will see a recipe just for her. 
 
This recipe is also for you all as it’s a delicious one and will be great for the festive season. It also uses only a few ingredients and is very simple, I hope you like it. I have some in the freezer and when anyone comes over for a cup of tea I can quickly pop one or two out of the freezer as they defrost quickly.
 

Raspberry Bites

1 cup fresh or frozen raspberries (defrosted)
1½ cups shredded coconut (you can use desiccated if you prefer)
10 dates soaked in boiling water for 30 minutes of so
1½  cups vegan chocolate
 
In a food processor add the raspberries, coconut and dates and blitz until all combined. 
Place in a container and put in the fridge for a couple of hours to harden up a bit. The mix may still be quite soft so you can either shape into squares or random shapes. 
Once shaped put back in the fridge while you are melting the chocolate. 
To melt the chocolate place it in a bowl which sits over a saucepan of boiling water. Keep the heat relatively high until the chocolate has melted. 
Dip the raspberry squares into the chocolate with a spoon and cover in chocolate.
Once covered place in a paper lined container and set in the freezer.
