Continuing on with the request for chickpea recipes. I stumbled upon a recipe for spiced chickpeas. Wow, these are a must have in the fridge at all times. They will last for three to four days in the fridge but you guessed it, only lasted two days in mine – as greedy me gobbled them all up.
 
They are fabulous to sprinkle over salads or eat with your steamed veg or add on the top of soups or on hummus as a garnish. And the very best way to eat them is just on their own as a pre-dinner snack or as part of a tapas spread.
 

Spiced Chickpeas

480g cooked chickpeas (that’s roughly 200g dried chickpeas)
2 tsp fennel seeds
2.5 tsp cumin seeds
2.5 tsp coriander seeds
10 black peppercorns
3 cloves garlic minced
3 tsp finely chopped rosemary
2 – 3 tsp smoked paprika
¼ tsp cayenne
¾ tsp salt
Big splash of olive oil 
 
Once you have cooked the chickpeas put them in a clean tea towel and rub off the skins.
Temper the fennel, cumin, coriander seeds and peppercorns by dry frying them for 1 to 2 minutes or until they smell fragrant. 
Let the seeds cool a little then grind them either in a mortar or spice grinder. 
Add a splash of olive oil to a frying pan, heat it up a little then add the garlic, salt and rosemary. Cook and stir for a few minutes or until the garlic seems soft.
Add the rest of the ingredients including the ground spices and cook for a further minute.
Mix in the chickpeas and cook until they are fully warmed through and coated with the spices. 
 
Salad ideas to add the spiced chickpeas to
 
Rocket, grilled zucchini and roast beetroot.
Broccoli, ruby grapefruit and mint 
Tomato, cucumber, red capsicum and grilled mushroom

Looking for a name

I have started a new Facebook group which is better than my business Facebook page as it is more interactive for you all. You can ask me questions, post your own vegan recipes or just peruse all the recipes and info I add on there. Right now it is called Healthy Vegan Food With Veet
 
However I am on the search for a new name.
