Recipes that Everyone Can Enjoy at Christmas

This is the first of two blogs I will write with lots of Christmas/festive time/ holiday type recipes. First of all I will share a scrambled tofu recipe which will have your guests on Christmas morning or any special morning going back for seconds and even possibly thirds. Then below that recipe will be links to my all time favourite recipes to make at this time of the year. Next week I will share recipes for a traditional Christmas feast and some more casual recipes for those that like to sit around the pool (or like me sit in front of the TV watching Boxing Day cricket) at these festive times.

So back to Scrambled Tofu. I tried out this particular scrambled tofu recipe on two retreats I recently catered on. I watched a total of fifty eight people go back for more and more. A few people couldn’t believe how much like eggs it tasted and one person told me I had just taught her how to give up eggs for life.

However I cannot lay claim to this recipe. It is not mine. It has come straight out of the Smith and Daughter’s cook book. Who knows this cook book? Who knows Smith and Daughters? For those of you who don’t, Smith and Daughters is a vegan restaurant in Fitzroy Melbourne. The owners Mo and Shannon also have a vegan deli called Smith and Deli. Both are very popular eating places.

Also a tad controversial as Shannon herself is not vegan. For me I do not understand this at all as if she can create this awesome vegan food that people love to eat (vegans and non vegans alike) then why not just give up eating animals. However what Shannon does have to offer by still eating animals, is that she manages to get food to taste like animals. This is why her vegan scramble stands out as one that reminds people of actual eggs.

Anyway give this recipe a try before Christmas so you can perfect it and then cook it up Christmas morning for all your guests (or if you are alone treat yourself to a very special breakfast). I have tweaked the recipe somewhat as the original recipe uses wheat flour. I use brown rice flour to make it a gluten free recipe. I cook it a little differently and love to add wilted spinach but I suggest only doing this if you know your guests like spinach. Keep it simple without the spinach if you want to wow your guests into thinking it is very similar to scrambled eggs.

Scrambled Tofu

2 tbsp olive oil
¼ cup brown rice flour
¼ cup nutritional years
¼ to ½ tsp of powdered turmeric
¼ tsp parika
½ to ¾ tsp black salt (this is sulfurous salt and you can buy it in health food shops)
1 cup soy milk
1 tsp dijon mustard
pepper to taste

3 spring onions finely sliced
500g hard tofu crumbled into big pieces
handful of spinach or dill or parsley(this is very optional)

In a saucepan add one of the tablespoons of olive oil and then the brown rice flour, stir in the soy milk gradually. Keep stirring until it becomes a thick, smooth sauce. If it is too thick you can add more soy milk. Add the nutritional yeast, turmeric, paprika, black salt and pepper and mix in. Turn the heat off the sauce and let sit for a while.

In a frying pan or wok add the remaining 1 tbsp of oil and the spring onions and tofu and cook until it is browned a little on most of the pieces.

Fold the sauce into the tofu gently and heat for a few minutes. Fold the herb of choice in also gently.

Christmas Cake

I’ts not too late to start making your Christmas cake as it will last for ages so you can eat a small piece each day. It does get better with age.

Note: I have been asked to add Low FOD Map diet recipes. To make the tofu low FOD map keep out the mustard, and only add the green part of the spring onion.  Serve it with gluten free bread and wilted spinach.
Stay away from the cakes and eat a piece of fruit instead. For the watermelon salad use strawberries instead. The potato cakes will work on your diet and make the nut cheese with macadamias instead of cashews.

Eat organic over Christmas

I know Christmas time is a super expensive time for many but I would really recommend spending that little extra and buying organic produce. As this is usually a time of over indulgence you will help your body out more if you make it all organic. It really does help for the flavour too. Even though we don’t celebrate Christmas I am sure to make a special dinner for me and Makrand and all the produce will be sourced organically. We are lucky though to have great farmers markets that we can visit each week.
