After a very successful raw food workshop last weekend I am very happy to announce one last cooking class for 2013, to be held on the 20th of October.  The class will be the Delicious and Nutritious workshop. In this workshop you will learn a variety of simple and easy recipes that you will feel confident in trying out at home. The recipes will include snacks, entrees, mains, drinks and desserts. The recipes will come from the ‘Veet’s Cuisine’ cook book and also some brand new recipes I have to share, including a few raw recipes. There will be a theme called ‘a little bit around the world’ where we will explore different flavours from world cuisines. All recipes will be gluten-free and you will be shown  how to adapt them for your particular dietary requirements.

My cooking classes are always dynamic and fun and have as much hands on activity as you wish to be involved in. The Delicious and Nutritious class will be held from 8:45 am to 2 pm on Sunday the 20th of October in the Byron Bay shire and will cost $125 per person. This will include all of the food used, morning tea, lunch and a copy of  Veet’s Cuisine Delicious Vegetarian Recipes Cookbook as well as any additional recipes we may cover in the class.  The class will be small and there are only a few spaces left.

If you can’t make this workshop and would like to organise a workshop of your own it is very easy to do so. All you need to do is gather friends who would also like to join in a class and then we can look at scheduling a day next year. I am very happy to travel to you and we can use your kitchen or you can come to the Byron shire and have a class down my way. Classes in the Byron Shire are $125 per person and out of the Byron Shire $150 per person. And until the class on 20th of October or until youv'e had a chance to buy your own copy of Veet's Cuisine Delicious Vegetarian Recipes Cook book I would like to share a very simple stir fry recipe with you.

Simple Stir Fry

splash of oil

1 Spanish onion sliced finely

500 g green vegetables, I like to use brocoli, green beans, silverbeet or kale leaves, zucchini, snowpeas cut however you like stir fry I like them in julienned pieces and the brocoli in long pieces with the stalk

1 block of tempeh sliced or 2 eggs per person

2 kaffir lime leaves

1 garlic clove minced

2 kaffir lime leaves

2 tsp of freshly grated tumeric

1- 2 tbsp gluten free tamari

juice of half to 1 lime

2 red hot chiliies (but of course these are not necessary just optional)

coriander leaves as garnish

salt if needed

In a wok place your splash of oil and then the onion, garlic, kaffir lime leaves, tumeric and chili if using, stir fry for a few minutes.  Add a sprinkling of salt if you like and then the vegetables, stir fry them until they are cooked to your liking and then add the tamari and lime juice.  Add salt to taste then turn off the heat.  In another pan dry fry the tempeh or place a bit more oil and fry the eggs to your liking.  Serve the stir fry with brown rice or millet and put the tempeh on top of the veg and garnish with coriander leaves.
